The first 2 bears I think of are:

The bear on the California Club chips, downtown LV. Complete with a neon bear outside!

And then there's "White King" the polar bear at the Commercial Hotel in Elko NV. Also featured outside over the entrance. White King was stuffed and in a glass case inside when I was there many years ago. (His fur had yellowed over the years, but he was 9-10 feet tall!) He may not be on display any longer; not sure either way.
