A pie chip is one assembled out of individual pie shaped pieces of clay before being molded. This is different from clay chips with edge spots as these are composed of a notched central section of one color into which different color pieces of clay are inserted before molding. The notches don't go to the center of the chip.

Special situations occur when the chip has an opaque center inlay because, without destroying it, you can't tell whether the chip is a pie chip, a dove tail chip, or just a standard chip with a large inlay and deep inserts.

There are a few instances of pie chips being made with inserts as well. This Riviera no-cash-value chip is a half pie (two segments) chip with 8 vee-shaped edge inserts. There is also a 5 Riviera NCV made this way. And no, I don't know for sure whether this is a dovetail or not [g].
