Hi Roy,

A life time ago I used to be a craps dealer. The "bevel edges" are a European design characteristic. It is very practical in that the chips last longer. When the player, and dealers are moving the bets around the layout, they wear out. The French roulette jetons were the first to implement this technology. It is still part of the manufacturing process, with B&G, and other manufactures of European style gaming chips, plaques, and jetons.

If you have one, inspect the edges, and you will see very little signs of wear. LMK if you have other questions regarding chip manufacture. I know these facts from a practical vantage point, a collector, not so much.
