1) Visit The Chip Guide website (http://www.chipguide.com/) that will give you a general idea of what kind of different casino chips are out there and don't restrict yourself to one type of chip, I mean in addition to Chipco there is also GPI (Formerly Paul-Son) just to name a few.
2) I'd like to suggest that you start out collecting chips from Las Vegas and Atlantic City and then work your way to other locates.
3) The denomination of the chips that you want to purchase depends on what you can afford and what interests you, In my situation I usually stick with $1, $2.50 and $5 chips and on occassion I've been known to also acquire $10 and $25 chips that peak my interest (But not often), Now as far as purchasing the chips, if you go to the casino and purchase it directly from a table or from the casino cage then you'll get it for face value but if you purchase it from a dealer, fellow collector or on eBay then expect to pay a little more because it's considered open market and the price you'll pay also depends on a few other factors including, the condition of the chip which includes Mint, Near Mint, Very Good, Good and Poor, whether the chip is a rarity or not and/or the popularity of the chip because of the particular design or because it has the portrait of a celebrity or singer on it such as the 1999 issued $5 Mayor Oscar Goodman chip from the Four Queens which probably runs between $8 and $10 depending on what kind of a deal you can get.
