on the Bossier side are Horseshoe, Boomtown, and Diamond Jack's. Horseshoe is separate but the other two are next to each other (though not really walkable). next to Horseshoe is a brand new outdoor shopping area that i've heard is very nice.
Harrah's Louisiana Downs is maybe 15-20 minutes away from downtown. It's very nice, new, and spacious but was machines only last time I was there (maybe a year ago).
unfortunately, unless you're going back and forth between Sam's Town and Eldorado, the only way to get around is by car or taxi.
Of the casinos, Horseshoe and Eldorado are the biggest and nicest. Horseshoe seems to consistently have the highest table limits in town, from my experience. All of them get pretty crowded on the weekends. Horseshoe has the best buffet, IMO.
As far as hotels, they all have them. Horseshoe, Eldorado, and Sam's Town have highrises. Horseshoe is the nicest, but all are fine. Boomtown and Diamond Jack's have smaller hotels, a little more utilitarian, but still fine. Personally, I often stay at the Holiday Inn downtown Shreveport - better rate than the casinos, pretty close to them (especially the Shreveport ones), and you're going to be driving around anyways. It's a typical Holiday Inn - not luxe, but not a total dump
we have a family tradition of eating breakfast or lunch at Strawn's Eat Shop, 125 King's Hwy in Shreveport. the strawberry pie there is amazing - truly one of the best things I have ever eaten.
as far as chipping, the easiest way to get chips is to buy a rack in the poker room of the casinos that have one and pick out the good ones. not all the casinos have poker rooms, I know that Horseshoe and Eldorado do, and one of the other Bossier ones, I think. They can't sell chips at the cage, so you'll have to go to the tables to get what you want.
