I was aware of the blue and green versions of this WFH (Wells Fargo Hockey) chip, but was unaware of the 2 varying font styles of the blue chip. Also, the right-most chip has "$1" on the back, the middle chip has "$1.00":
Prior to the convention, I was aware of the many different insert versions of this Paradise Island chip, but until now, I was unaware of the 2-insert versions - one with "Bahamas" (top left), the other with "Nassau Bahamas" (top middle):
I was aware of the smooth (left) and linen (middle) versions of this Lucky Chances chip, I now am aware of the linen version with both a black $1 (middle) and linene with a red $1 (right):
Prior to the convention, I was informed of the lighter color insert version of the Key Largo chip (thanks Michael Siskin). At the convention, I was able to pick one up:
Here is one that I was not aware of until I came home and compared my Convention acquisition with what I already had. I think this counts as a color variation (white versus off-white). But then again, I do have some color detection issues:

...and finally an insert color variation I was unaware of. It does not show up very well in the scan, but the one on the left has tan inserts, the one on the right has orange inserts. If you had the chips in your hand, it would be pretty obvious:
