ANYTHING IN THE Plaza, although I have stayed there many times, If it is your first trip then you should stay somewhere central on the strip so you can walk around without a car or cab, The Paris is very nice, The Flamingo is an older property and very central. You wont be in the room much. Downtown is fun too but I favor the Golden Nugget standard room over the Plaza suite
