I use the 2 1/2" flips for the common stuff in my collection. ($1's, LE's, etc...) I store them in an amazingly useful tool chest with 7 rows of perfectly sized drawers. (I'll have to take pictures some day.) I used to store them in binders, but it was an incredible pain to reorder them whenever I got back from a chip show. I'd suggest the double-row red boxes like many folks do unless you stumble across a tool chest like I did and want to put some work into creating dividers for it.
Anything over about $20 in value goes into an airtite and into the vault. I can't see spending the money on an airtite for a $1 chip. I use the 2 inch red boxes to hold those.
Instead of using the Avery labels, I picked up one of those "new style easy staplers" from Staples that can darn near staple bricks. It is almost effortless to staple with it. I've found that the labels pop open too easily.
