...but if you've never eaten sturgeon...you're definitely missing
out...best fish I have EVER had! What's nice about sturgeon, is
that their skeleton is on the outside of the fish..(exo-skeleton?)..
a genetic trait from prehistoric times...that's what makes them so
good to eat...you never bite into a bone! Also makes it easier to
clean (I'm told)...but it does look like you've just gutted a bear
when you're finished cleaning it! Lots of blood...<G>
