You can generally buy as many as you want if they are current value chips, Mike. I think most of the Multiple-chip lots you see are for home poker games, not for collectors of vintage chips.

Some casinos will limit you if you want a lot of low value chips; dollar and below because they may be low in inventory and generally pay more than face value when they reorder.
