What you get, and how many, really depends upon what game(s) you'll be playing. I have two sets, one for poker tournaments and the other for our cash game. Tournaments are relatively easy to figure if you know how many chips (and rebuys) you will use to start.
Cash games depend upon your usual limits and upon whether you allow people to sell chips across the table or do as the card rooms and casinos do and prohibit that. If you let them sell you need fewer total chips. If you don't, you probably need to figure on about 25 times the upper limit (i.e. in 4-8 games, about $200 worth of chips) per player.
