If you don't have ENOUGH suggestions above, here are a few more...
BREAKFAST - if you wanna get out of the casinos, try the Peppermill on the strip. I think it's the best breakfast in town.
ITALIAN - someone mentioned Capozolli's on Maryland Parkway just south of Desert Inn. I'll second that emotion... eat there every time I'm in town.
STEAKS - Seems that every great steak place has a location in Vegas. You can't go wrong with Morton's, Piero's, Ruth's Chris, Smith & Wolenski's, Gallaghers in New York, New York (my favorite restaurant in NYC growing up), or about 20 others. I'll recommend especially the Golden Steer, just off the strip on Sahara - old mob-style place with great food. But, I gotta say, last time I was in I had a steak at N9ne in the Palms, and it was probably the best piece of meat I ever had... I cut the steak in half and my jaw dropped.
CHINESE - For a light Chinese meal, I like Chin Chin in New York, New York. In my opinion, they have the best Chinese Chicken Salad on the planet, among other things. For something more exotic, there's PF Chang's - there's one in the Aladdin and another one on Paradise. Here in L.A., I've been to 5 of them, and there's ALWAYS a BIG line to get in... and with good reason.
