Since what we call "chips" are actually historically known as "tokens" in most casino jurisdictions around the world, I would think we may be Numistmatists specializing in casino chips/tokens/plaques. Since French is spoken widely throughout the world, and "jeton" (also in German and ...) translates to "token" kind of says we are "token" collectors which would fall under numismatics.
