Different scanners use different angles for their lights and scanning bar. This is to prevent reflection back into the sensors. Most newer scanners will give you that shadow on three-dimensional objects due to this angle.
As for the color, you can calibrate the color settings in the scanner software to permanently get a truer scan - may take a few tries, but well worth the effort. Remember, it may also be your monitor, as every monitor will display color differently (color depth, RGB values, etc.). IMO, settle for 'close' is good enough.
