The "computerization" you mention is not being done by the person writing the message. HTML reads the ampersand differently, so when someone uses it in a message it thinks something different is happening and replaces it with the character you see. They were actually writing CC AMPERSAND GTCC but it was changed for them. That is why many of us now leave out the ampersand and just use CCGTCC.
