Paul; I'm 100% certain that the casino's accountants would take a different view on what you (and others) perceive to be "profit".

An outstanding chip (cheque) is looked upon as a debt liability on the balance sheets. Therefore, all 1000 chips, no matter what the denomination, have the hypothetical potential of being presented for redemption at any time, so where is the "profit" ... according to the bean counters?
