In AC when a casino swtiches and mass amounts start leaving the tables most floor people know what is going on. They still have internal procedures to follow and it is common to go by tables that have certain colors set aside with notes on them. Often it becomes hard to get the last color off a table because they will want that color for anyone playing $5 or $25 a chip. Casinos keep track of how many of each color are walking during a shift and eventually they are replenished.
