We buy Jumbo now, one egg instead of two for breakfast. I don't know if that makes any sense financially, but about half the time, they have two yokes.

That's jumbo vs medium, I never got around to buying three sizes just for the photo opp. The Medium were free and then I bought our usual Jumbo.

Minimum weight per dozen: (which to me is fairly inconsistent because some really Jumbo eggs, mixed with some very small Extra Large would still make weight?)

Jumbo: 30 oz. per dozen
Extra large: 27 oz. per dozen
Large: 24 oz. per dozen
Medium: 21 oz. per dozen
Small: 18 oz. per dozen
Peewee: 15 oz. per dozen

If your eggs puff up into little wet white clouds and get brown and crispy around the edges, your pan is too hot.
