Why is the Culinary Union such an impostition on the casinos? Are there any articals on the subject? I have heard bad things about the "Union" from other chefs and have avoided the idea of practicing my profession there due to the confines of their hiring/firing practices. Do the casinos not offer competitive wages and benefits w/o the union?
