I've had the V600 scanner for a couple of years, and I have the same problem. I've experimented with it for hours with more combinations of settings than I can possibly remember. Now most of the time, it just sits on my desk begging for attention, which I usually refuse to give it.
By pure happenstance, I discovered that if I put a chip in an airtite, the scan comes out pretty good. Then a simple circle crop removes the surrounding ring of the airtite, leaving just the chip. The clear covering of the airtite itself isn't evident in the scan. I have no idea why this works, but the airtite somehow allows the scanner to get a truer color with more detail. Whodathunkit!
These days, I just use my phone camera. The V600 scanner seems to be too smart for its own good.
