Here's a scan I did yesterday, using Epson Perfection V370 Photo scanner model.
But your Epson should get similar results.
I use 300 dpi and 24 bit color, which seems sufficient, without taking up too much size.

After using Preview button to capture the initial image, I use the "rotate" icon, if necessary to make it right-side-up. Then use the image sizing tool (dotted lines) to outline the size of the object I want. Then use the magnifying-glass icon to see the preview image as it will look when scanned. Then hit the Scan button, and it captures the image as a jpeg in whatever file you direct it to.
You can see my settings are 300 dpi / 24-bit color. Otherwise, just use the default settings. Lots more can be tweaked, but this works for me. (Sounds confusing though).
