According to the 2019 chip show booklet, there were 41 different dealer-tables listed. This excludes the tables devoted to club promotions, MOGH, Auction tables, exhibit tables, etc.

In a few instances, there are 2 dealers that share 1 table, so actual number of dealers was in the mid- to high-40's.

Per a BB post a few days ago, an update to the convention & dealer table layout, etc. will be included in a June 2 club email newsletter. It should include the latest Covid restrictions (if any) per Nevada & South Point rules too.
