The days of these specialty chips may be over, with occasional exceptions ... at least for Nevada issues.
Recent trends: The following casinos have issued new rack chips, due to opening, name change or ownership change. Their new racks, with one exception, have been $1 & $5 and up chips, but no snapper and no grand opening. (Grand Opening would have been a misnomer in some cases anyway.)

Scarcity of $5 BJ tables (other than some that pay 6:5) accounts for decision not to make snappers, IMO.
Grand Openings are optional, and the decision makers seem not to be interested in the "found" money that G/O walkers make. (Maybe the extra accounting isn't worth it, for these multi-million dollar properties??)
Ever since Gene retired from the Palms, and the Hard Rock closed, there hasn't been any real chip-centric interest in catering to our hobby. And that's OK with me. Chips, at their core, are primarily a tool in the casino industry, not a collectible, as far as casino management is concerned.
Maybe we will be surprised when Resorts World opens (Chinese New Year LE's & others?) or even when Virgin-LV reopens. If Hard Rock does open on the strip eventually, who knows ...?
