I'm not a token collector, but the 2 token sellers I think of are:
B&V Coin (Wendy Schultz) - table 7 at the last convention
Dan's Casino Tokens (Dan Wickett) - table 12 at the last convention.

There are probably others as well. Both dealers were doing some selling, so there seems to be a market out there.

For roulettes, Jerry Birl is the big roulette guy, which I'm sure you know.
