In roulette, they can mark the value of a stack of chips of a particular color or to count chips (not sure why); in craps they can mark a buy or lay bet, as well as whether particular bets are off during come out rolls and in poker, the dealer buttons (big blind, small blind, kill, etc.) are really lammers.
