Because you had all of your jetons in front of you, like at any other table game. You would push the jetons you wanted to bet out front, away from your stacks, and tell them what you wanted to bet. The croupiers were quite talented at using their sticks to lift the jetons and place them on the betting field. I have a set pattern on my roulette bets, and some of the croupiers would remember that pattern (or most of it) after a few months of my playing the game.

A true story...my roulette betting pattern includes betting straight up on zero. One night, the ball landed on zero, and there WAS NOT one of my jetons on zero. When I saw that, I told the croupiers that I ALWAYS bet on zero. One of the croupiers told the pit boss that I ALWAYS bet on zero. The pit boss looked at the table, looked at me, and told the croupier to put one of my jetons on zero and pay me for the winning bet! It really helps when the table staff and pit boss know who you are!
