The Knights Club chip is a clear nod to the Rutgers Scarlet Knights. There doesn't appear to be a Knights Club affiliated with the school and there's no way that's an officially licensed product of the NCAA. I looked around for a private establishment like a local sports bar or something but none of that matches. It's most likely a fan of Rutgers that had either a home set or illegal set made, but unfortunately I can't specifically pin it down...only possibly narrow it a little bit.
