A kicker is a single card you have chosen to hold in addition to others in the hand because if may affect your win depending on how your draw turns out. In JacksOrBetter VP, any card you add to a pair or 3-of-a-kind would be a kicker. I believe it's true you are advised to never hold a kicker in the JOB game.
In other VP games, particularly those with "Double" or "Wild" in the name, you may sometimes want to hold a kicker. You need to refer to the strategy for each of those games to see when you do hold it.
Just a warning to those who play VP occasionally. The casinos in the last few years have begun changing the pay tables on many versions of VP so that the expected return is less favorable for the player. It's a good idea to check the payoff for FullHouse and Flush as that's what is most commonly modified to increase the house return (worse for the player). Full pay for the JOB game is 9-6. I advise not paying any of these JOB games that are reduced from 9-6. Here's a table that shows how changing these two payouts affects your expected return when you play perfect strategy.
