Sam's Town, Shreveport, LA has one. I am going this weekend to play in a WPT Tournament at the Horseshoe in Bossier City, just across the river from Sam's Town. Don't know how available they will be but will pick up a couple extras if they are in new condition.
Also, IP in Biloxi, MS has issued an anniversary chip. Don't know about smaller Louisisan riverboats -- Amerlia Belle, Amelia, LA and Treasure Chest, Kenner, LA. Will check them later in year.
