The chip guide is a guide that comes from user submissions. So if I or you have the chip and willing to make a scan for it to be published then you will see it in the guide. As such there are far fewer collectors of $100, $500, $1000 than of $1, $5, $25 and the submissions reflect that.

Take a look at Paul Hegge's site at silver-state-treasures.com (Nevada chips only). Paul actively goes to get the higher denomination chips for the scan. Also you can check the TCR (for Nevada again) and see what is listed there. You could also check the PDF from Nevada at http://gaming.nv.gov/modules/showdocument.aspx?documentid=3549 to see the historical list of approved chips.
