1) Depends on the casino. Some have changed several times in a year, some have never changed their chips. Anything in between is possible.
2) Depends on the catalog. There have been many chip guides for all sorts of geographic areas and even for specialty areas such as Riverboats and "Wet" chips (casinos on ships). For the Chip Rack and Gaming Table, contact David Spragg. For California, contact Armin Pfaender (spelled wrong, but I have no idea what the correct spelling is). I am not sure if any of the other guides have been updated in the last few years.
