it's tough to prepare that much food and deliver it to every table at the same time.
I thought the waitstaff was amazing.

When you have a buffet you have long lines and simmering food. It's always a compromise with either choice. It seems that we tend to compare a banquet to a restaurant. However, in a restaurant people arrive in small groups. Here, you have the whole group seated at one time. Tough job as somebody is first and somebody is last.

That being said, I've seldom had any food I didn't like. Sit-down, buffet, basket, bag..... Hence the spare tire...
