Jeremy, as a relatively new collector I agree with the others who suggested you start now. I didn't, and it's going to take a long time to catalog my collection. Since you're using a Mac, you might want to check out Bento. It's a database program for Mac that's very easy to use. I downloaded a coin collector template for Bento and edited the fields to suit my needs. Couldn't be easier. I attached a screen shot in case you want to consider this option.
