Not sure this will help, but I'll give my 2 cents, anyhoot. I've have been working in the entertainment industry (specifically TV) for the last 10 years and there would be many reasons why the production company would order another set of chips. I think the show was on the air for about 5 years, which is a pretty good run. During this time the show producers will change many things, including re-doing or improving the set. If they where going to re-do their set, they could have ordered/bought the chips first and then the show got canceled. Another reason is that when a show goes on "hiatus" they tear down the set and all the props get stored somewhere. The original chips or part of them could have easily been misplaced or stolen, then they would need to order replacements. Another explanation would be they were ordered for publicity shots. The Network that airs the show would buy certain props and wardrobe specifically for publicity photos or on-air promos for the show. The network would do this every year the show is on the air and after the photos are shot, the stuff gets stored, sold or given away. They never re-use this stuff by the way. Now this doesn't prove the chips were actually used on the show during taping, but I do think these chips could have been from the show. Too bad Hulu doesn't have any old seasons of Las Vegas, then we can all watch each show. I guess someone will need to by the DVDs
I enjoyed the first few seasons when James Caan was on the show. It got kinda crazy, then I stopped watching it.
