Yes, I know the club and show are much more than chips. No matter what name you pick, it will never encompass everything.
Personally, I think you need the one word "brand name", then you can say whatever you want.
----> ChipFest - "The World's Largest Show for Gaming Collectibles"
Without the keyword hook, you'll constantly be going back to the easy to say "convention".
"You going to the World's Largest Show for Gaming Collectibles this year?"
or
"You going to ChipFest this year?"
As for timing, as Paul said, its surely too late to get something going this year. All just something to think about.
