Paul-Son Dice and Card was founded in 1963, but the 60- color chip set was in use from 1985 - 2002. So that only gets you (at the most) 39 years.
However, both of the Endys (Paul Sr. and Paul Jr.) had previously worked for TR King prior to leaving and forming Paul-Son, so that might be where they're getting their extra years of "Serving the Gaming Industry".
If you count the 65 years from when gambling became legal in NV (total guess on my part, since at least crest and seal chips predated that, but could conceivably correlate with when casino chip security, at least at scale, would have become an issue in NV / the U.S.), that would get you to 1996. That fits within the timeline of the 60- colors being in use, but reduces the number of years Paul-Son would have been in existence to 33. So clearly numbers may not foot due to rounding.
