Oscar, all good guesses but the the real reason has to do with the drop, hold, and to some extent security. A little too complicated to explain here, but a quick example, a player walks up to the cage with $25,000 in chips and wants to cash them, it's real easy to tell where they came from, a quick phone call verifies it.
