I don't think inmates sort the cards. The casino normally wants to make certain that no one is taking or inserting cards into the game so when they change decks they normally sort them. I have seem it many times when sitting at a table at 5 am. Cards normally have minimal value anyway - they used to sell them at Big Lots and other discount places for $.69 a deck. Of course really old decks are worth more.
