I started collecting in 1960 with my first trip to Las Vegas. I just kept a $5 chip from every casino I visited. As the years went by, many of those casinos closed. In 1997 I discovered that there were other "crazies" like me that also like to collect chips and I joined the, then, Casino Chip and Gaming Token Collectors Club, now the CCA.. Since that time, I have focused primarily of $5 and $100 chips from Las Vegas.
I would follow the advice of others and pick chips that really interest you. Elsewhere on the board today is an individual selling his $1 chip collection. Maybe that is a way for you to get a head-start!
Most of all, do it because you enjoy it, not because you think you will make money out of it. Most collectors only sell chips to buy more!!!
