They add another dimension to the display. AND, in the case of older dice, the bottle would "quarantine" any decaying dice...which would help protect any dice in the surrounding area.

I also like the clear paint cans that you use to display the coin cups. I noticed them in the Plaza and/or El Cortez displays and thought they were very clever.
