I did not coin the phrase UFC and take no credit for it, good or bad. Unidentified Flying Chip does not make any sense, on its own. But everyone understands the term UFO, Unidentified Flying Object. UFC is a take-off on UFO, I am sure that it was the term comes from. UFO has expanded its meaning to a generic Unidentified Object, not just Flying objects. And so, UFC kind of fits chips of unknown origin. Personally, I would keep UFC, unless someone comes up with a better term.
