I've never been to the Red Rock, but I really want to go. It is just so out of the way, but it looks like a great hotel and they are supposed to have a pretty good poker room.
I've seen the Delano get mixed reviews, but it is actually one of my top 3 Vegas hotels.
If you are a "pillow snob" like I am, they have a menu of about 10 different types of bed pillows you can have them bring to your room..a nice touch.
When I am with my wife, we prefer the boutique hotels on the Strip..Delano, Signature, and Vdara are our favourites..much quieter and smoke-free and they are adjacent to Mandalay Bay, MGM Grand, and the Aria, respectively.
I took my kids in December (19 and 17) and we stayed at Sam's Town on Boulder Highway. If you are 17 or older you can walk around the hotel, food court, bowling alley, movie theaters, etc without someone 21+. It is much more laid back and friendlier than most Vegas hotels. And if you don't rent a car, they have complimentary shuttles to the Strip and Downtown, which is very nice.
When I have gone by myself for a solo poker trip, I really don't care where I stay..as long as it has a bed and a shower and is in a good location..
