You can't customize them, you are stuck with them as they are. The developer would never provide the code (well maybe if you forked out $50k), they are compiled apps. All you can do is enter the data pretty much like a spreadsheet.
The only person that has the data to add is the convention chair, and it adds a ton more work to their duties.
