Lots of reasons why it couldn't be done.
We don't have the dies and modern foils are different.
Most of the old molds have long since worn out and reside in museums. You can't make a chip without a mold.
Modern dyestuffs produce generally brighter colors all the time, and the finish is different. Inlays are printed on paper by an inkjet printer nowadays. Any attempted reproduction would be blindingly obvious as such.
It's an altogether different product nowadays even though they are still made the same way as that is what the equipment and materials dictate. Pretty much the same as comparing a modern day Paulson to one from even just 20 years ago.
