Question about infection

I don't normally collect dice, but I do have about a hundred illegal ones (How many times do we hear "I don't collect that, but...")

I've often heard that once dice start to smell like vinegar you need to quarantine them so they don't "infect" the others. I always thought this was something in the chemistry of the individual dice and never really understood how this could infect other dice - like a virus or something. Is it maybe bacterial?

I keep all my dice in one tub, but each is separated in it's own little jewelry ziplock bag. I haven't looked at them in years. Jeff (rest his soul) and I collaborated on a bunch of illegal research back in the day and competed for better dice. When he passed I lost interest.
