I was there once when the chips were in use. I was living in CA, but returned to Dallas to visit family. They took me to Billy Bob's to eat.
The wait was about an hour, which I gather was typical.

So they had about 6-8 blackjack tables set up with live dealers. You could purchase chips to play with for a nominal amount -- like $5 for 1000 in chips. Play blackjack to kill the time. But when they called your party's name, you had to surrender your chips. No prizes or anything, just for amusement and killing time.

I wasn't collecting chips at the time, so I didn't pocket any then, though I've purchased some since.
