Just had a call with the big boss at SM in Austria about an hour ago and mentioned part of this. Having seen your post, I'm talking to him again while I type. (Dont worry he is working in Australia right now so Im not keeping him up)

He said that is absolute BS, and he does not believe for a minute that anyone working for SM told you that, and certainly not at a public booth at a public show where you could have been anyone. They are not capable of specific sorting at all. Yes they can read the cars coming out, but not the ones going back in.
At the end of play, it spit all the cards out, reading them on the waym to confirm they match with what was loaded originally. Does not put them into order. That is to guarantee no player switched a card etc.
I would be far nor worried about the magician that works the Matsui booth, with his card shuffling demos that really can put the cards in specific order before you start. Then if someone threatens to mess it up by taking a card when they shouldn't he deals one from not just the bottom but anywhere in the deck to put it back on track.
