Did they do other plaques? Short answer is No. The "Chip of the Year" chips in that block of Lucite was made by Chipco as a promotion to Chipco winning the first four Chip of the Year contests. It was not until 1998 that another Chipco chip won COTY honors (Excalibur, Merlin) and their last win was in 2000 (Fiesta, ).

However, Chipco did create a special "Ladies of Gaming" 3-chip, stacking chipset that were not casino issue chips, but depicted images of 3 different Chipco, casino issued chips. The 3 chips came in a boxed, velvet-like cardboard punch-out. I do not know how much they cost, nor how many were made, but this is what they looked like individually...
