Peter Luger's came to mind because a chipper friend gave me a call a 1 am (it was 10 pm his time!) to tell me he is watching "How its made" and one of the features is prime beef. In the segment they followed a beef picker from Peter Luger's from the time the sides of beef come in (she marked those beefs good enough for PL) until they were delivered to the restaurant's cold storage room for aging.
I wonder how much money passes under the table to be able to be the first to pick the best beefs.
BTW, what made you pick Peter Lugers, located in the (used to be) crappy section of Brooklyn when in Manahattan there is Old Homestead, Mortons, Ruth's Criss, Sparks, etc
I lived in Brooklyn for 37 years and never went to PL's because it was just too out of the way.
