Though I do not know of anyone who keeps their jetons or plaques in a fridge or freezer before serving them up on a game or for long-term storage, I am aware that both high temp and humidity is not a good thing... especially with older pieces.... I also know there are collections that are 75-years old and older that are still in their original state of preservation -- having been photographed, published and exhibited... so proper storage is the answer when we know for a fact what water can do to some of those older pieces years later.
There was an excellent post by a French collector having good advice regarding such storage tips and I'm sure is still in the archives.. (within the past three years or so).
